The Fungus Files: Oyster Mushrooms

Oyster mushrooms might easily be our favorite fungi. It’s an excellent source of protein, vitamins, minerals and fiber. It contains antioxidants like selenium to help protect body cells from damage that might lead to chronic diseases. It can also help strengthen your immune system.

Here’s how they break down per one cup serving:

28 calories

1 gram of fat

2 grams of dietary fiber

3 grams of protein

Oyster mushrooms also contain:

  • Riboflavin
  • Potassium
  • Niacin
  • Vitamin B6
  • B Vitamins
  • Folic acid
  • Magnesium
  • Vitamin C
  • Iron
  • Pantothenic acid
  • Amino acids

Here are some of our FAVORITE Oyster Mushroom recipes. Try them out and experiment with adding or subtracting ingredients (we find that a simple bbq spice of smoked paprika, garlic, cayenne and salt is the most amazing combination).
