Once I posted a picture of pasta with a cream sauce with the hashtag #healthy, and I got an interesting response. A woman (who turned out to be a ‘healthy chef’) declared that cream sauces can’t be healthy. I asked her why, but she never responded. It turns out, she’s not alone in her thinking. Many people think that the very nature of a creamy sauce or dish is unhealthy. It may have a lot to do with the fact that most cream sauces are full of dairy and other potentially detrimental ingredients. But the truth is cream sauces… like any recipe… is entire dependent on what you put into it. If you want a healthy cream sauce, it’s possible.
Try it and see how it comes out for you. If you’re worried about the healthy nature of cashew milk, consider a brand with the least amount of ingredients possible. You can also sub out almond or oat milk… just taste as you go. We made the sauce as a base for Chanterelle Mushrooms (sauteed with a little oil and garlic), and mixed with hearts of palm pasta.
